Salted mushrooms

Advantages of Salted mushrooms:

  • Pickled mushrooms are a more effective green treatment. By soaking in brine, the freshness of the porcini mushrooms can be kept longer for easier transport and storage. This treatment method not only prolongs the shelf life of food, but also reduces food loss and waste, and is more environmentally friendly.

  • When eaten, pickled mushrooms undergo a desalination process to restore their original flavor and texture. Because the water is removed during curing, the food is easier to preserve and the original flavor and texture can be restored after desalination. This is one of the reasons why they are so popular, people can enjoy the advantages of convenience and practicality while enjoying great taste.

  • Since pickled mushrooms are pickled foods, they can also be mass-produced according to demand to meet the needs of different groups of people.

  • Pickled mushrooms are a practical and delicious way to prepare food. Not only does it keep the porcini fresher for longer, it is also loved for its reinstatement properties.

Use of boletus edulis in brine

Boletus edulis in brine is one of the current methods of processing salted mushroom products. The processing is raw boletus mushroom harvesting, raw boletus mushroom primary sorting and color protection , pre-boiling rinsing and cooling , grading selection, pickling, acidity and alkalinity deployment, plastic barrel packaging, storage and transportation.

Boletus edulis preserved in brine is usually used in industrial processes, i.e. in the production of mushrooms in oils, sauces or other mushroom-based products.

The preparation of pickled mushrooms consists of cooking them for a short time in brine, usually slightly acidified with citric acid, then cooling and soaking them in a concentrated brine. After fermentation in brine for 10-15 days, the salted mushrooms are drained and immersed in fresh brine. A different curing technique is used in some countries: mushrooms are pressed immediately after harvest, cured in small vats (solid salt) and then transported to a processing plant where they are rinsed under running water, sorted and immersed in concentrated brine. Then we received the final pickled mushroom products.
