Grade standards for shiitake mushrooms in brine:
Grade one mushroom: Grayish white in color, 3 to 12 cm in diameter, generally without a mushroom stem, and if with a stem, the length must not exceed 1 cm. The mushroom tissue is tender and complete, with no serious wrinkles or cracks on the edge, and no sand, impurities, pests and diseases, shrinkage, deterioration, or odor, and it cannot be soaked.
Grade two mushroom: The color can be grayish white or grayish brown, and the diameter is also 3 to 12 cm, but it can have a mushroom stem (no more than 1 cm in length). The shape is basically complete, and no more than 1/4 of the cracks on the edge of the mushroom cap are allowed, but it is still necessary to ensure that there is no sand, impurities, pests and diseases, and odor.

In addition to the grade distinction, the finished product of shiitake mushroom must also meet the following standards:
Color: Mainly light gray, with a small amount of gray-brown allowed.
Tissue morphology: According to the shape, it can be divided into whole mushroom and fan-shaped pieces. The horizontal diameter of the whole mushroom must be between 3 and 10 cm, and the string length of the fan-shaped piece must not be less than 2 cm.
Smell: It must have the aroma of fresh pickled mushrooms and must not have any odor.
Sodium chloride content: The salt content of shiitake mushroom must reach more than 19%, but crystallized salt is not allowed in the finished product.
