Use of boletus edulis in brine:
Natural boletus slices in brine, as a rule, can be used in mechanical forms, i.e. in the production of mushrooms in oils, sauces or other mushroom-based products. Plans for brined mushrooms slices in drum includes cooking them for a short time in brine, as a rule somewhat fermented with citric corrosive, at which point cooling and splashing them in a concentrated brine. After aging in brine for 10-15 days, the mushrooms are depleted and drenched in new brine. A different curing technique is used in some countries: boletus edulis mushrooms are pressed immediately after harvest, cured in small vats (solid salt) and then transported to a processing plant where they are rinsed under running water, sorted and immersed in concentrated brine. For brined mushrooms slices in drum products to be transported long distance, fill the empty barrel with a food grade plastic bag and then fill the bag with saturated salt solution to adjust acidity and alkalinity, fill the barrel with a quantitative amount of mushrooms and seal the bag with a lid after tightening it.
